Ingredients:
1 Slice Wholemeal Sandwich, Toasted (You can use your preferred bread)
1/4 Avocado, sliced thin
2 Slices Smoked Salmon
1 Poached Egg
Pinch of Pepper
Method:
Start by preparing the poached egg. Bring a pan of water to a simmer, and stir in form of a circle. Then, carefully tip the egg into the water. Leave to poach for approximately 3 minutes to get a runny yolk.
Meanwhile, prepare the bread by toasting it, then layering the sliced avocado and smoked salmon.
Carefully place the poached egg on top of the smoked salmon.
Serve immediately.
