Avocado and Smoked Salmon Toast

MAKES 1 Portion

Ingredients:

  • 1 Slice Wholemeal Sandwich, Toasted (You can use your preferred bread)

  • 1/4 Avocado, sliced thin

  • 2 Slices Smoked Salmon

  • 1 Poached Egg

  • Pinch of Pepper


Method:

  1. Start by preparing the poached egg. Bring a pan of water to a simmer, and stir in form of a circle. Then, carefully tip the egg into the water. Leave to poach for approximately 3 minutes to get a runny yolk.

  2. Meanwhile, prepare the bread by toasting it, then layering the sliced avocado and smoked salmon.

  3. Carefully place the poached egg on top of the smoked salmon.

  4. Serve immediately.
