MAKES 4 Portions
Total Preparation Time: 15 minutes

Ingredients:
300g whole-wheat pasta
1 avocado, peeled and stone removed
150g sundried tomatoes
150g Pesto Genovese
1 tbsp sundried tomato oil
2 cloves garlic
Method:
Finely chop the cloves of garlic and sundried tomatoes and set aside.
Cut the avocado into small cubes.
Boil water in a large pot and place the pasta in boiling water for 8-10 minutes.
Meanwhile in a pan, add the sundried tomato oil, garlic and the chopped sundried tomatoes. Cook for approx. 2 minutes and turn off the heat.
Once pasta is cooked (preferably al-dente) add the pasta, pesto and diced avocado to the pan and cook for another minute until all ingredients are combined.
Serve.
