Avocado & Sundried Tomato Pasta

MAKES 4 Portions

Total Preparation Time: 15 minutes



Ingredients:

  • 300g whole-wheat pasta

  • 1 avocado, peeled and stone removed

  • 150g sundried tomatoes

  • 150g Pesto Genovese

  • 1 tbsp sundried tomato oil

  • 2 cloves garlic


Method:


  1. Finely chop the cloves of garlic and sundried tomatoes and set aside.

  2. Cut the avocado into small cubes.

  3. Boil water in a large pot and place the pasta in boiling water for 8-10 minutes.

  4. Meanwhile in a pan, add the sundried tomato oil, garlic and the chopped sundried tomatoes. Cook for approx. 2 minutes and turn off the heat.

  5. Once pasta is cooked (preferably al-dente) add the pasta, pesto and diced avocado to the pan and cook for another minute until all ingredients are combined.

  6. Serve.
