Ingredients:
4 medium ripe bananas
2 eggs
2 cups rolled oats
1/4 cup vegetable oil
1/4 cup honey
1 tbsp vanilla essence
1 tsp baking soda (bicarbonate of soda)
1 tsp baking powder
1 1/2 teaspoons cinnamon
¼ tsp salt
3/4 cup fresh blueberries
Method:
Preheat the oven to 160 degrees.
Mash the bananas and mix with beaten eggs, oats, oil, honey, vanilla essence, baking soda, baking powder, cinnamon and salt in a bowl. Mix until a smooth batter forms.
Add the blueberries to the mixture.
Pour the mixture into muffin moulds.
Bake for about 30 until a toothpick comes out clean.
Once ready, let the muffins cool for a few minutes before serving.
