Banana-Blueberry Muffins

Total Preparation Time: 15 minutes


Ingredients:

  • 4 medium ripe bananas

  • 2 eggs

  • 2 cups rolled oats

  • 1/4 cup vegetable oil

  • 1/4 cup honey

  • 1 tbsp vanilla essence

  • 1 tsp baking soda (bicarbonate of soda)

  • 1 tsp baking powder

  • 1 1/2 teaspoons cinnamon

  • ¼ tsp salt

  • 3/4 cup fresh blueberries

Method:

Preheat the oven to 160 degrees.

  1. Mash the bananas and mix with beaten eggs, oats, oil, honey, vanilla essence, baking soda, baking powder, cinnamon and salt in a bowl. Mix until a smooth batter forms.

  2. Add the blueberries to the mixture.

  3. Pour the mixture into muffin moulds.

  4. Bake for about 30 until a toothpick comes out clean.

  5. Once ready, let the muffins cool for a few minutes before serving.
