Oven-baked Falafel Bites



Ingredients

  • 2 cans chickpeas, drained and rinsed

  • 1 tablespoon ground cumin

  • 1 tablespoon ground coriander

  • 1 tablespoon smoked paprika

  • 4 tablespoons whole-grain flour (or any flour)

  • 1 teaspoon baking soda

  • 1 tsp cayenne pepper

  • 1 cup chopped fresh parsley (include stalks)

  • 1/2 medium-sized onion, chopped

  • 4 cloves garlic

  • Juice of half a lemon

  • 2 tsp lemon zest

  • Salt and pepper to taste

Method

  1. Preheat oven at 200 Degrees Celsius.

  2. Blend all of the above ingredients in a food processor until well-combined.

  3. On a large tray lined with non-stick baking paper, shape the mixture into bite-sized oval patties using two spoons.

  4. Brush with olive oil and bake in the oven for 20/30 minutes until golden.

  5. Serve with hummus or tzatziki.
