Ingredients
For the pastry:
600g almond or oat flour, sifted
2 tablespoons baking powder
170ml oil
120ml maple syrup (or honey)
Zest of 1 lemon
1 Lemon Juice
2 tsp vanilla extract
2 egg yolks (you can use flax egg mixture to make a vegan version)
50ml cold water
For the filling:
250g pure ground almonds
55g maple syrup
110g medjool dates
Zest of 1 lemon
25 ml lemon juice
optional: 2 tbsp agave syrup
For Decoration
160g Dark Chocolate
80g Vegan Smarties
Method
Healthy Pastry
Mix all the ingredients in a food processor, starting with the dry ingredients until a dough like mixture is formed.
Remove from the food processor and knead the dough for another 2 minutes.
Almond Filling (Healthy Intrita)
Mix all ingredients in a food processor until a sticky dough is formed and set aside in a large bowl.
Making Figollini
Preheat oven at 200°C
Prepare a large dish with baking paper.
Roll the healthy pastry dough to a 1 cm thickness, cut it into the dough using your desired cutters.
Place the almond filling on the pastry shapes, and place the same-shape cut pastry on top to cover the almond filling.
Gently press the edges with your fingers and place the figollini in your prepared lined dish.
Bake for 20 mins at 180°C or before they start to golden.
Transfer to a cooling rack and let cool.
Decorating
Melt your desired chocolate until smooth, using bain-marie or microwaving a suitable bowl.
Pour the warm melted chocolate on the figolli and sprinkle your desired topping, we used D&Ds.
Let the chocolate dry and solidify before serving.
*To make a flax egg, mix one tablespoon ground flaxseed meal with three tablespoons of water. Let the mixture in your fridge for at least 15 minutes to thicken to an egg-like consistency
