140ml almond milk
95g Greek yogurt
85g honey (or sub with maple syrup if vegan)
1 tsp vanilla essence
Juice of 1 lemon
195g Good Earth plain white flour
12g Good Earth poppy seeds
2 tsp Doves Farm baking powder
Half a teaspoon Doves Farm bicarbonate of soda
Zest of 1 lemon
Pinch of Himalayan salt
Mix all wet ingredients in a bowl.
Combine all dry ingredients in another bowl.
Add in the wet mixture to the dry one and whisk until a batter forms.
Preheat the pan to medium heat.
Spray with a low-calories cooking spray or use a teaspoon of vegetable oil.
Pour the batter using a small ladle, to create small pancakes, which will be easier to flip. Carefully flip the pancakes once small bubbles appear on top.
Stack and top with greek yogurt. Enjoy!
