Maple-Blueberry Pancakes


Ingredients:

  • 200ml almond milk

  • 175g spelt or oat flour

  • 2 tbsp maple syrup

  • 1 tbsp natural oil

  • 1 tsp chia seeds

  • 1 tsp baking powder

  • 1 tsp vanilla essence

  • Blueberries


Method:

  1. Whisk gently the almond milk, maple syrup, oil, and vanilla essence in a large bowl.

  2. In another bowl, mix the dry ingredients to the mixture.

  3. Combine the dry mixture to the wet mixture and add the blueberries. Let the mixture to set for 5 minutes.

  4. Preheat the pan on medium heat.

  5. Spray low-calorie cooking spray or use a teaspoon of normal oil.

  6. Pour the batter carefully using a small ladle. (Tip - Go for smaller pancakes to get a more fluffy consistency. They will also be much easier to flip!)

  7. Serve with a drizzle of maple syrup or greek yogurt.
