
Ingredients:
200ml almond milk
175g spelt or oat flour
2 tbsp maple syrup
1 tbsp natural oil
1 tsp chia seeds
1 tsp baking powder
1 tsp vanilla essence
Blueberries
Method:
Whisk gently the almond milk, maple syrup, oil, and vanilla essence in a large bowl.
In another bowl, mix the dry ingredients to the mixture.
Combine the dry mixture to the wet mixture and add the blueberries. Let the mixture to set for 5 minutes.
Preheat the pan on medium heat.
Spray low-calorie cooking spray or use a teaspoon of normal oil.
Pour the batter carefully using a small ladle. (Tip - Go for smaller pancakes to get a more fluffy consistency. They will also be much easier to flip!)
Serve with a drizzle of maple syrup or greek yogurt.
