Ingredients
Bars
1/2 cup peanut butter
3/4 cup old fashioned rolled oats*
1/3 cup roasted almonds, chopped
1/4 cup desiccated coconut
1 1/2 tbsp. coconut oil
1/2 tsp. cinnamon
3 tbsp. honey
1 tsp. vanilla essence
1 tbsp. chia seeds
Toppings
1 tablespoon almonds, chopped
1 tablespoon walnuts, chopped
2 tablespoons dark chocolate chips
Method
Add all of the wet ingredients (peanut butter, coconut oil, honey and vanilla essence) to a saucepan. Stir continuously on medium heat and add the cinnamon.
Once the mixture is smooth, remove from heat.
Stir the mixture in oats and chia seeds, and then add the desiccated coconuts and almonds.
Line a loaf dish or a small dish with baking paper and pour the mixture.
Spread the mixture evenly and place the nuts.
Bain-marie* or microwave the dark chocolate chips for 35 seconds on high until melted
Drizzle the melted dark chocolate on the mixture
Cover the dish with foil and put the mixture into the freezer for 1 hour.
Remove the mixture from the dish and cut evenly into bars.
Store the bars in the fridge.**
*You can also use gluten-free oats
** Bars will last for a week
