Ingredients:
Base
120g peanuts, roasted
110g Medjool dates, pitted
100g rolled oats
90g desiccated coconut
1 tbsp coconut oil, melted
Middle Layer
330g Medjool dates, pitted
4 tbsp natural smooth peanut butter
2 tbsp honey
1 cup of water
52 peanuts, roasted
Chocolate
9 tbsp organic coconut oil
6 tbsp raw cacao powder
3 tbsp honey
1 tbsp Himalayan salt
Method:
Base - Put all the ingredients in a food processor and blend until the mixture is smooth and combined. Take a tablespoon of the mixture and form a smooth base in each mould.
Place the silicone cups with the base in the freezer.
Middle Layer - Put all the ingredients in a food processor and blend until the mixture is smooth.
Spread the mixture on top of the base in the moulds. Freeze for another 2 hours.
Raw Chocolate - In a glass or a bowl, bain-marie the coconut oil, cacao powder and honey. Once the mixture is smooth, pour inside the moulds on top of the other layers.
Leave to set in the fridge for 2 hours before serving.
