Salted Caramel Cups

Ingredients:


Base

  • 120g peanuts, roasted

  • 110g Medjool dates, pitted

  • 100g rolled oats

  • 90g desiccated coconut

  • 1 tbsp coconut oil, melted

Middle Layer

  • 330g Medjool dates, pitted

  • 4 tbsp natural smooth peanut butter

  • 2 tbsp honey

  • 1 cup of water

  • 52 peanuts, roasted

Chocolate

  • 9 tbsp organic coconut oil

  • 6 tbsp raw cacao powder

  • 3 tbsp honey

  • 1 tbsp Himalayan salt


Method:


  1. Base - Put all the ingredients in a food processor and blend until the mixture is smooth and combined. Take a tablespoon of the mixture and form a smooth base in each mould.

  2. Place the silicone cups with the base in the freezer.

  3. Middle Layer - Put all the ingredients in a food processor and blend until the mixture is smooth.

  4. Spread the mixture on top of the base in the moulds. Freeze for another 2 hours.

  5. Raw Chocolate - In a glass or a bowl, bain-marie the coconut oil, cacao powder and honey. Once the mixture is smooth, pour inside the moulds on top of the other layers.

  6. Leave to set in the fridge for 2 hours before serving.
