
MAKES 11
Ingredients:
1 cup self-raising flour
1 tbsp baking powder
2 tbsp maple syrup
1 tbsp apple cider vinegar
1 cup almond milk
1 tsp vanilla essence
Pinch of Salt
1 tsp Blue Spirulina powder
1 tsp Red Beetroot powder
1 tsp Pink Pitaya powder
Method:
In a bowl, mix the flour, baking powder and salt.
Add almond milk, maple syrup, apple cider vinegar and vanilla essence to the mixture.
Pour the batter into three separate bowls and in each mix well a teaspoon of super food powders to get blue, red and pink batter. You can make other colours such as purple or mix batters to get marbled pancakes. 😍
Put a pancake pan with cooking spray or a teaspoon of normal oil (We used Isio 4) on medium heat.
Pour the batter using a small ladle.
Carefully flip the pancakes once bubbles appear on top.
Serve warm with your favourite toppings (We topped ours with a mixture of greek yoghurt, honey and vanilla essence).
